did you know, sorbet is believed to have been around since 500BCE, originating in persia. in ancient times, ice was deemed unsanitary and chilled drinks were thought to cause convulsions and stomach issues. despite this, ice was also seen as a luxury, given its nature to melt, of course. the word, 'sherbert', coming from Persian 'sharbat', enters the english language around the 1580s. every culture has its own version of flavored ice—or "snow", as they used to call it—sorbet without milk, sherbert with a bit of milk, and progressing onwards to gelato, ice cream, and more.
